Vineyard
The 45-hectare vineyard, divided into 11 plots, is located in the village of Lannepax. It consists of the four traditional Armagnac grape varieties: Ugni Blanc 58%, Colombard 16%, Folle-Blanche 14% and Baco 12%. Throughout the year, Rinaldo, the vineyard manager, takes the greatest care of the vines during their development.
Wine Cellar
The four grape varieties are harvested, pressed, and vinified separately in a wine cellar a few meters from the distillery. Sylvain Delord has mastered temperature control, must sedimentation, and racking. He is looking for an aromatic wine that is slightly acidic and low in alcohol, which is ideal for distillation.
Distillery
The distillery is located in Lannepax, the family's native village. Distillation, an essential and fascinating step in the creation of Armagnac, takes place in the heart of winter. They are one of the few Armagnac houses that use two distillation methods; the continuous distillation method typical of Armagnac and the double distillation. The two Armagnac alambics, one of which is a " Sier " from 1900, are column distillers equipped with special plates, called "spinning plates," which are ideal for producing aged Armagnacs. The two " double distillation " distillers produce fruity eaux-de-vie intended for young Armagnacs.
Maturation
The cellars with more than 1,000 barrels and a dozen oak tanks that mature and protect the Armagnac eaux-de-vie date from the 20th century to the present. The oldest vintages are kept in Bonbonnes (glass jars) out of the light, in a room called Paradise.
