Cachaça, a distilled spirit made from fermented sugarcane juice, has approximately 500 years of history and is therefore considered the first distilled drink of North and South America.
The cachaça is aged in barrels that give the drink softness, coloring and flavor. The woods used by Engenho Dom Tápparo are: Amburana, Amendoim, Carvalho Americano, Carvalho Europeu and Jequitibá.

Amendoim and Jequitibá are Brazilian woods, European oak and American oak are imported woods.
Engenho Dom Tápparo's cachaças are kept in these barrels for a minimum period of 6 months before being bottled. The oldest cachaça sold by Engenho Dom Tápparo is Cachaça Cabaré, aged for 15 years in European oak barrels.
