Sotol is a distilled spirit crafted from the Dasylirion plant, which thrives in the rugged landscapes of the Chihuahuan Desert in northern Mexico. While it shares similarities with tequila and mezcal, sotol stands apart with its unique production process and distinct flavor profile. Unlike tequila, made from blue agave, or mezcal, derived from various agave species, sotol comes from a different desert plant, giving it a character all its own.
The heart of the plant (piña) is roasted, fermented, and distilled, much like mezcal. However, sotol is typically less smoky, offering a more herbaceous, grassy, and earthy flavor with subtle complexity.
