On the south coast, protected from the full force of the Atlantic trade winds, lies Old Bacolet. It was one of the first areas cultivated by the French. It lies between two small rivers and, due to the high water table, lush sugar cane grows here over almost 25 hectares of land and four different terroirs. The fast-growing Cain sugarcane variety was harvested for this rum.
Tasting notes:
Nose: Soft notes of caramel and vanilla.
Flavour: A robust spicy flavour from cinnamon to allspice with soft undertones of sweet roasted nuts.
Finish: Pleasant, dry and lingering finish with an underlying spiciness.
