This new limited edition from Rest & Be Thankful is a blend of 10 barrels of Jamaican rum. Distilled in 2015 in Lluidas Vale (Jamaica), this rum is the result of a rapid fermentation (around 30 hours) in American oak vats, followed by distillation in a Forsyth type iron still. The distillate was then aged for 4 years on site in Jamaica in first fill bourbon casks before being moved to Scotland for a further 3 years. The result is a beautiful light molasses rum that is both delicate and complex with Jamaican markers.
This is the second small batch that delivered 3571 bottles.
Tasting Notes:
Aroma: Grilled pineapple and juicy passion fruit, woody accents and creamy chocolate mousse.
Taste: Ripe pineapple, apple, nectarine and plum. Cool vanilla ice cream with hot caramel sauce, cinnamon and oak spice.
Finish: Medium-long and fruity-sweet.
